Even when people started saying that all bread is bad for you, bread and I were still tight.<\/p>\n<p>But then this cauliflower bread recipe came along and swept me off my feet. It\u2019s easy to make and has a lovely, savory flavor that makes regular bread seem bland.<\/p>\n<p>Cauliflower bread is also just as versatile \u2014 you can make open-faced burgers, tartines, mini pizzas, and top it with a sunny-side-up egg.<\/p>\n<\/p>\n<p>With egg and mozzarella cheese baked right in, cauliflower bread\u00a0has just as much protein and fiber as most whole-wheat breads, but it has more flavor and far fewer carbs.<\/p>\n<p>The texture is dense, like a good loaf of artisanal bakery bread, yet not heavy.<\/p>\n<p>Eating a single slice of this \u201cbread\u201d counts as a full serving of vegetables.<\/p>\n<p>Stuff some lettuce, tomato, and turkey between two slices, and you\u2019re actually eating three full servings of vegetables.<\/p>\n<p>For people who have a hate-hate relationship with veggies (you know who you are) cauliflower bread\u00a0is an easy way to eat more of them without even noticing!<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone wp-image-10170272115\" src=\"https:\/\/bod-blog-assets.prod.cd.beachbodyondemand.com\/bod-blog\/wp-content\/uploads\/2017\/04\/Cauliflower-Toast-in-post2.jpg\" alt=\"Cauliflower Toast Recipe\" width=\"600\" height=\"401\" title=\"\"><\/p>\n<p>Turning a head of cauliflower into cauliflower toast is surprisingly easy, especially if you have a food processor.<\/p>\n<p>You might be tempted to skip the step where you squeeze the excess moisture from the cooked cauliflower (I was), but don\u2019t.<\/p>\n<p>I used a clean dish towel for this step, but you can also use cheesecloth or heavy-duty paper towels.<\/p>\n<p>You can customize your cauliflower bread\u00a0with different ingredients, but note that some add-ins will change the nutritional content.<\/p>\n<p>For a pizza flavor, add oregano, basil, and sun-dried tomatoes. Make it spicy with chopped jalape\u00f1os or a dash of cayenne pepper.<\/p>\n<p>Have a favorite semi-soft cheese like smoked gouda or Emmentaler? Swap it for the mozzarella.<\/p>\n<p>How about a combination of cheddar, chives, and a single piece of crumbled turkey bacon? (No cheesecloth? Use a heavy-duty paper towel.) Don&#8217;t skip this step \u2014cauliflower needs to be dry.<\/p>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<p>Combine cauliflower, egg, cheese, salt, and pepper in a medium bowl; mix well.<\/p>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<p>Place cauliflower mixture onto baking sheet in four even portions. Form into squares.<\/p>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<p>Bake for 15 to 17 minutes, or until golden.
